Directions and notes:
Rub down the roast with some Olive Oil and sear it quickly in an iron skillet. Place the roast in a good sized
Dutch Oven. Lay out the potatoes around the roast, sprinkle the top with the onions, garlic, carrots and whatever else you like. I usually open the Mushroom Soup and mix it with a full can of water and the sliced Mushrooms. Pour this over the roast and all of the other ingredients. I put use Cajun spices or Cayenne Pepper to taste and bake between 3 and 4 hours in an oven at 375 degrees F.
